Creamy Chicken Bacon Spaghetti (Feeds 5-6)

This isn’t an alfredo recipe! It is 100x better! FULL of flavor! I was so shook when I tasted it. Y’all were hounding me for the written recipe on instagram and I made sure I had it up before y’all cooked Sunday dinner. I definitely outdid myself. Hope y’all enjoy!

Ingredients:

  • Olive oil

  • Kosher salt

  • Chicken Seasoning of choice

  • Pepper

  • Paprika

  • Italian Seasoning

  • Onion Powder

  • Garlic Powder

  • Grated Parmesan Cheese

  • 4 tbsps of cream cheese (softened)

  • 12 oz of spaghetti

  • 8 slices of uncooked bacon (cut up into small pieces)

  • 6 or more boneless chicken breast (preferably thin sliced)

  • 1 red or orange bell pepper (diced)

  • 1 bag of spinach (rinsed well)

  • 2 garlic cloves (minced, grated, or chopped finely)

  • 3 tbsps of salted butter

  • 3 cups of heavy cream

Directions:

  1. Boil pasta noodles, following box directions. Add salt and a tbsp of oil to water.

  2. Coat chicken breast with olive oil. Season chicken on both sides w/ chicken seasoning, kosher salt, paprika, onion powder, garlic powder. Set Aside.

  3. Add bacon to a non-stick skillet (preferably cast-iron) and fry on medium-high heat. When it’s nearly done, add the diced bell peppers and cook w/ the bacon.

  4. Continue to fry bacon on until crispy. Remove bacon and grease from skillet and place into a bowl, leaving a little bit of the grease in the skillet.

  5. Add 2 more tbsps of olive oil to skillet.

  6. Add chicken to the skillet and cook on medium- high heat until browned on both sides and done on the inside. Do not overcook, because you don’t want dry chicken breast!

  7. Shred chicken with two forks.

  8. Add 1 tbsps of olive oil to a skillet and add in spinach while wet. Season w/ salt and cook down the spinach until wilted.

  9. In another skillet, add the bacon, bell peppers, 3 tbsps of butter, and fresh garlic. Cook on medium-high until butter is fully melted.

  10. Stir in heavy cream. Add in cream cheese and parmesan cheese.

  11. Season to taste w/ onion powder, garlic powder, black pepper, kosher salt, and italian seasoning. Mix well.

  12. Add in spinach and pasta and continue to mix well. Place shredded chicken on top. Add fresh parsley for garnish, if desired. Serve immediately.

Substitutions: Add mushrooms or sundried tomatoes if you’d like! Half and Half can be substituted for heavy cream, just add in an extra 1-2 tbsps of cream cheese.
